Baked Chicken Fajitas: Easy Sheet Pan Recipe

Oh y’all. I love fajitas, smoky from the grill, in all their glory. I don’t always have time or energy for that so when I need a quick and easy dinner I grab the ingredients for this stupid easy baked chicken fajitas sheet pan recipe! It is so unbelievably good and it’s done in about 30 minutes. All you do it throw everything on a sheet pan and shove it into the oven! Hello back to school! Hello easy weeknight dinner! This is one of those recipes the whole family will love but it also freezes well so you can make it on your prep day and keep all the goodness to yourself.

For this recipe you’ll need: chicken breast, green Bell peppers, yellow Bell peppers, red Bell peppers, jalapeno or poblano peppers, onions, olive oil, chili powder, cumin, garlic powder, oregano, and smoked paprika (or just use a prepared fajita seasoning in place of the herbs but read the ingredients carefully!).

I love summertime and spending lots of evenings on the deck grilling dinner. There’s no scented candle in existence that smells as good as grilled food!

Right now it is 109F degrees outside and last night it was still 100F at 10 pm. Crazy! The last time I grilled in this kind of heat I got blisters on my palms from grabbing the chrome handles to open the grill up! And, as I was trying to Instagram the process my phone stopped working because it overheated. So, when it’s like that I stick to the inside as much as possible.

This easy, oven baked, fajita chicken recipe is a no brainer. It’s super low in carbs and it tastes SO good! The smoked paprika I use in the seasoning even adds that little punch of smoky flavor to the chicken. I like to slice the meat and top a salad with the chicken and vegetables – or just eat as is with some cauli-rice on the side.

When making fajitas the regular way and adding rice, beans, tortillas and other carbs the estimate is 4 servings per pound because the additions fill you up more quickly.? I’d figure 2 servings per pound for a normal appetite.

Sprinkle the chicken breast with about 1 teaspoon of seasoning per pound and pat it in. Let it stand for at least 30 minutes before grilling so the meat can absorb some of the flavor.

Quick and easy, these just-spicy-enough chicken fajitas are perfect with cauliflower rice and a heap of vegetables! So simple and just one sheet pan to wash!

Ingredients

  • 2 pounds chicken breast
  • 1 green Bell pepper
  • 1 yellow Bell peppers
  • 1 red Bell peppers
  • 1 jalapeno or poblano pepper
  • 1 onion
  • 1 tablespoons olive oil
  • 2 teaspoons chili powder
  • 2 teaspoons cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon smoked paprika more to taste
  • Cooking spray

Instructions

  • Preheat the oven to 375F.
  • Spray a sheet pan (make sure it has a little side to it – there will be juices) with cooking spray.
  • Slice peppers into strips.
  • Rub chicken with the olive oil.
  • Mix the herbs together and gently rub into chicken.
  • Let stand for 15 minutes.
  • Place the vegetables on the baking sheet.
  • Cover with the chicken.
  • Bake for 20 minutes, or until a digital thermometer registers 160F.
  • Let stand for 5 minutes.
  • Enjoy topped with guac, sour cream, grated cheese, or whatever you like.
