For this recipe you’ll need: hemp seeds, vanilla protein shake mix, flax seeds, unsweetened coconut flakes, Swereve sweetener, coconut oil, butter, vanilla extract, and an egg.

I love granola but of course you can’t have it on a low carb diet, or can you?
The granola is crunchy and sweet with deep vanilla cake batter flavor and it doesn’t get soggy in milk (whatever kind you use – I personally like a couple of tablespoons of heavy cream on mine!)
We just got back from vacation in Port Aransas and I was thrilled that I had only gained a couple of pounds. I was even more thrilled that those couple of pounds melted right off within two days after I got back! I think that the fact that I have increased my protein intake to about 125 grams has helped a lot. I’ve been working with free weights since my 23 year old was home on leave in March, and I think that the free weights work more effectively than the weight machines — at least that’s what my experience seems to be. My 21 year old flies in tonight for his two weeks of leave time so hopefully he can help me with a few more things! He’s been on the Iwo Jima since February. With three boys in the military I treasure the times when I get to see them. 🙂

Anyway, stir this low carb cake batter granola several times as it is baking and break up any lumps that are big. I think I cooked this batch just a little too long — remember that it will be soft when it is hot and crisp up as it cools. Store it in an airtight container in the pantry and it will keep for a long time.
It can be hard to find special ingredients, depending on where you live. Here are some of the things you’ll need that can be found on Amazon. It seems like Cellucor has stopped making their cake batter whey so I have substituted a similar whey protein powder with the same carbs.

CAKE BATTER GRANOLA
Ingredients
- 1 cup hemp seeds
- 1 cup Protein Shake Mix Cellucor Cake Batter – 4 scoops
- 3/4 cup flax seeds
- 1/2 cup unsweetened coconut flakes
- 1/3 cup Swerve sweetener
- 1/4 cup coconut oil melted
- 2 tablespoons butter grass feed and melted
- 1 1/2 teaspoons vanilla
- 1/2 cup egg white
Instructions
- Preheat the oven to 300F.
- Mix all of the ingredients together until crumbly.
- Spread out on a cookie sheet that has been sprayed with cooking spray.
- Bake, turning and stirring about every 10 minutes, for 30 minutes, or until the crumbles are firm and golden.
- Let cook.
- Store in an airtight container in a cool dry spot.

not sure what you mean by 1/2c egg white. Is that the dry egg white powder or crack real eggs and separate to get 1/2 c whites only? looking forward to trying this!
