Low Carb Cheeseburger Casserole
Ingredients
- 1 pound lean ground beef
- Salt and pepper
- 1/4 cup Onion chopped
- 6 slices Bacon
- 1 clove minced garlic
- 1/4 cup chopped dill pickle
- 3 eggs
- 1/2 cup mayonnaise
- 1/2 cup half and half
- 8 oz shredded cheddar cheese
Instructions
- In skillet, brown ground beef with onion, garlic, salt and pepper.
- Meanwhile cook the bacon until crisp.
- Break the bacon up into bite sized pieces.
- Drain the fat from the ground beef and the bacon.
- Blot with paper towel to remove as much fat as possible.
- Mix the bacon and pickles into the ground beef.
- Spoon the mixture into a greased 2 1/2 quart casserole dish.
- Preheat oven to 350F.
- Combine eggs, mayo and half and half being sure to mix well.
- Sprinkle cheese over beef mixture in pie pan and pour egg mixture over the whole thing.
- Bake 30-35 minutes, until top is browned and set.
- Cool 10 minutes before serving

For anyone out there wondering if this may be too eggy – let me chime in. I’m one of those people who ruins scrambled eggs and overcooks them because I can stomach it. I can do quiche as well. I am just one of those people who is iffy about eggs.
As for the recipe I really like the ‘base’ layer with meat, bacon, etc. I could’ve seasoned a lot more liberally which is my own fault. As for the egg layer… I’m not sure how I feel about it. It’s still very fluffy and light. It’s a quiche hybrid. With the pan I used I ended up with 4 servings. For me it’s my own personal preference with consistency. It’s still a little eggy to me.
Overall this is not a dig at the recipe but more so letting people who are on the fence like me know what to expect. I think this would also be great with a fathead dough to make a stromboli bake.
The recipe was easy to make and could easily have additions made to suit to your liking.
