I love this rich, creamy coquito recipe. Itโs the Puerto Rican version of spiked eggnog and has a delicate coconut flavor that covers the rum too well. I say too well because this is one of those drinks that you enjoy, thinking about how easy it is to drink, until you try to stand up. Sip on one โ itโs rich, itโs strong, and it had a lot of calories.
But you definitely wonโt be tempted by what other people are drinking.
I think that making this coquito recipe without eggs lightens it a little bit and lets the coconut flavor really shine through.

Coquito without Eggs or Dairy โ Vegan
Although I added some heavy cream to my low carb coquito recipe itโs fairly easy to make vegan, especially since weโre leaving out the eggs, anyway. The vegan coquito has a slightly different texture but all of the flavor of my low carb version.
Youโll just follow the recipe but make these changes โ
- Substitute coconut milk for the heavy cream.
- Add 1/2 a teaspoon of vanilla instead of 1/4 teaspoon
- Cut the powdered Swerve to 1 tablespoon rather than 2
- Let rest in the refrigerator an extra hour or two if possible
Follow everything else just like the recipe and youโve got a delicious vegan coquito!
Low Carb Coquito Recipe without Eggs

Low Carb Coquito (without eggs)
Ingredients
- 1/4 cup coconut milk , unsweetened โ the thick kind in the can not the refrigerated kind
- 2 tablespoons heavy cream
- 1 1/2 tablespoons powdered Swerve
- 1/4 teaspoon vanilla
- 1 1/2 tablespoons brown sugar cinnamon syruo , sugar free
- 2 tablespoons white rum
- 1 tablespoon coconut vodka
- 1/4 teaspoon cinnamon
- 1/4 teaspoon nutmeg
Instructions
- Blend all ingredients in a blender on high speed.
- Pour into a cup. If your making more than one โ pour into a pitcher and let rest in the refrigerator for an hour or two.
- Dust the top with a little additional cinnamon before serving.
