For this recipe you’ll need: ham, Gouda cheese, cream cheese, artichoke hearts, egg, heavy cream, salt and pepper.

I had my first quiche when I was 17. I had taken the mom of the guy I was dating out for an afternoon of shopping and lunch at the local mall. I can’t remember exactly why but I imagine it had something to do with her being one of the warmest, most nurturing women I’d ever met.
We stopped for lunch and I remember having to ask her what a quiche was. I was hesitant because I am not a huge egg fan, never have been, but she encouraged me to give it a try. I was so glad I did — I loved it. Tender, custardy egg with bits of diced ham and cheese came together to create magic creamy, rich, delicious magic.
This easy low carb quiche microwaves really well. I say this because I find that, while the food I make lovingly for my family takes hours of preparation at times, I am likely to want quick, grab and go food for myself. This quiche literally is ready to eat in less than three minutes. Three. You can make it while your coffee is dripping into your cup or your tea is steeping.
Being able to make a low-carb quiche like this means that I will actually eat something decent instead of opting for coffee and a promise to myself to do better next time.

You really can use anything you like in this quiche. A little cooked ground beef with chiles and cheddar, crumbled bacon and Swiss – anything. You won’t miss the crust at all.
If you want to bake this low-carb breakfast quiche in a regular or toaster over bake it at 375F for about 10 to 15 minutes, or until it is just set.

Ham and Smoked Gouda Low-Carb Breakfast Quiche
Ingredients
- 1 ounce diced ham
- 1 ounce Gouda diced and smoked
- 1/2 ounce cream cheese cut in small pieces
- 1/2 ounce artichoke hearts chopped
- 1 egg
- 2 tablespoons heavy cream
- Salt and pepper to taste
Instructions
- Butter the inside of an individual sized pie pan or custard cup.
- Sprinkle ham, Gouda, artichoke hearts and cream cheese in the pan.
- Blend the egg and the heavy cream.
- Pour over the mixture in the pie pan.
- Microwave for 1 minute, or until set.
- Let stand for a minute or two before eating.
