What is a good high fiber breakfast?

One of my favorite healthy breakfast recipes has always been cream of wheat. I love the smooth texture and the mild flavor that my mom would cook up in the morning when I was a kid. I love the way a pat of butter pools in the center. I love the way it fills me up at breakfast time. As a kid, I didn’t care about fiber but as an adult, fiber keeps things moving haha. What I don’t love to be honest, is that the net carbs are quite high in cream of wheat.

This morning, I was craving Cream of Wheat something fierce but I didn’t want to cave to the carbs being on a low carb diet. And this morning was one of those where my regular high protein scrambled eggs and a keto greek yogurt breakfast just didn’t sound good. What to do?

What foods are high in fibre but low in carbs?

Yes, my favorite breakfast of scrambled eggs and keto greek yogurt is high in protein, low in net carbs, but no it doesn’t have much fiber. This high fiber low carb breakfast cereal did the trick. It’s a combination of flax meal, coconut flour, and almond meal with a little sugar free sweetener and maple flavoring added. Once it’s cooked you can add butter, cream, and a little sweetener plus a dusting of cinnamon. It’s so delicious!

The coconut flour and almond meal give it a natural sweetness but I did add a little xylitol because I like things to be sweet. My only caveat about this is to eat it quickly. As the dish cools it gets goopy and gloppy. If you’ve been looking for a low carb, high fiber breakfast look no further. This is it!

What cereals are low in carbs and high in fiber?

Whenever I go down the cereal aisle at the grocery store, I’m amazed at the vast amount of sugar ladened cereals. Box after box, shelf after shelf, row after row. How does someone on a keto diet or even a low carb diet find a breakfast cereal that is keto in “Candy Land”?

When I’m tired of my high protein low carb egg heavy breakfast recipes, I love a cereal breakfast that reminds me of my mom’s Cream of Wheat. The way she made something so simple taste so great gave me this low carb breakfast idea.

I looked for something that had high fiber because with all the protein I eat. Making a keto recipe that has high fiber without all the net carbs isn’t as hard as it sounds. Usually you get fiber from whole grains. But those aren’t keto friendly. By swapping almond meal and flax meal, you can have lots of fiber for breakfast without all the carbs.

If you’d like to up the protein in this breakfast, I mix in a little protein powder. Sprinkle in some chia seeds also helps as 2 tablespoons have 4.7 grams of protein. That’s a ton of chia seeds and I usually stir in less than a teaspoon in my bowl.

Ingredients

  1. I buy a ground golden flax at Costco that does not require refrigeration. So, I multiplied this recipe and put it all in a canister with the instructions to add equal parts of this with liquid (we used vanilla almond milk) and microwave.

    That canister disappeared FAST. Cool weather has come to Michigan and I will have to make this again this week.

    I actually found this recipe when I came looking for the cauliflower hot breakfast porridge one. I did a big batch of that, too and my kids were very happy to scoop some out of the container in the fridge and heat it up with some butter. Wonderful stuff when kids will eat it!
