Pantry and grocery items needed for low carb grilled cheese:

For the grilled cheese

  • 4 slices keto bread
  • Cream cheese
  • Grated Parmesan cheese, you can use the shaker stuff here or splurge on Parmigiano-Reggiano
  • Heavy cream
  • Mayonnaise
  • Garlic Powder
  • Sliced Cheddar Cheese, for a more intense flavor, use extra sharp cheddar, for a more mild flavor use mild. I used a medium cheddar in today?s recipe, I wanted the other cheeses to shine as well!
  • Sliced provolone cheese, I like to use the non-smoked kind

For the keto cheddar bread

  • Large eggs
  • Cream of tartar
  • Unsalted butter
  • Finely ground almond flour
  • Baking Powder
  • Shredded Cheddar, again use the sharpness of your choice

I love that this recipe uses simple, everyday ingredients. Even if you don?t practice keto that often, you should have almost everything on hand. This is one of those recipes where you can take the lead and make it exactly how you like.

Don?t like provolone? Substitute sliced pepper jack.

Don?t like the idea of slathering the outside of the bread in mayonnaise? No problem, griddle it up in some melted butter!

Although, I highly recommend the mayonnaise addition. It helps the outside get super crisp and extra delicious!

  • Hand or stand mixer
  • Measuring cups and spoons
  • Cheese grater, if grating cheese by hand
  • Parchment paper
  • Loaf pan
  • Rubber spatula

How to make keto grilled cheese?

I highly recommend making our keto cheddar bread to go with your keto grilled cheese, however, using premade keto bread works too!

To make keto cheddar bread

Keto Cheddar Bread

  1. In two large bowls, crack and separate the egg yolks and egg whites, placing each into the separate bowls.
  2. Using a hand mixer, whip the egg whites with the cream of tartar. Using cream of tartar ensures the stiff peaks stay firm.
  3. Whip the egg white to stiff peaks. Stiff peaks mean that the egg whites will stand up when you take the beaters and flip them upside down, with no drooping. It will also leave a pattern in the egg whites that will stay and not melt back into the bowl. Set aside.
  4. In the bowl with the egg yolks, add in the melted and cooled butter, almond flour, and baking powder. Using the same hand mixer, no need to clean! Mix together on medium-low speed until fully incorporated.
  5. Using a rubber spatula, fold in half of the egg whites into the dough. It might seem impossible, but it will come together. Once fully incorporated, fold in the remaining egg whites.
  6. Add one cup of the shredded cheddar into the mix, and fold in. Pour everything into a parchment-lined loaf pan. Sprinkle the remaining cheese on top.

  7. Place into the preheated 375?F oven and bake for 30 minutes or until the top is slightly golden brown and a toothpick inserted into the center comes out clean. Let the bread cool slightly in the pan for 10 minutes, let cool completely on a wire rack for at least 30 minutes before slicing.

To make the keto grilled cheese

  1. In a small bowl, mix together the softened cream cheese with the parmesan and heavy cream. I just use a fork to combine everything until smooth.
  2. In a separate small bowl, add the mayonnaise and the garlic powder, stir to combine.
  3. Take four slices of keto bread and place them on a cutting board.
  4. Place one slice of provolone cheese on one half of the bread and a slice of cheddar on the other. Spread half of the cream cheese mixture on one side of the bread. Place the other half of the sandwich on top.

  5. Smear the ? of the mayonnaise mixture on the tops of the sandwiches, set aside.

  6. In your skillet over medium-low heat, wait until it gets hot and put the sandwiches mayonnaise side down into the pan. Spread the tops of the sandwiches evenly with the remaining mayonnaise mixture.

  7. Cover with the lid and wait until the bottom bread gets browned and the cheeses start to melt about 3-5 minutes.
  8. Flip, cover, and allow the other side of the grilled cheese to become browned. Another 3-5 minutes. Sandwiches are done when the cheese is melty and both sides are browned.
  9. Let cool slightly before serving, the filling will be very hot!

Tips and tricks for a smooth cooking experience

Keto Grilled Cheese

For the keto cheddar bread

  • It might seem like it takes forever to whip the egg whites into stiff peaks. It will take a while, just keep on whipping!
  • If your batter turns out to be a little lumpy, that is normal. It will still bake up perfectly.
  • This recipe makes 14-18 slices, depending on how thick it is sliced.

For the keto grilled cheese

  • Cream cheese in a grilled cheese? I know, it sounds weird. Trust me on this, the end result is ooey-gooey perfection.
  • The touch of the garlic mayonnaise on the outside is the extra touch that is needed to make this keto grilled cheese something really special. It gets the bread extra crispy, yet it still has that luscious moist bread that you get from grilled cheese with butter. Plus, the addition of the garlic powder adds an extra flavor dimension that is needed.
  • If you REALLY want that buttery flavored outside crust, I suggest mixing the mayonnaise mixture, half mayonnaise and half softened butter, then mix in the garlic powder. Spread on the bread in the exact same way.
  • Low and slow is the way to go when making grilled cheese. That?s why I suggest using a skillet heated only to medium-low. Having the heat too hot will result in a burnt exterior and unmelted cheese.

Again, modify this recipe to suit your taste buds. I believe the mixture of provolone, cheddar, parmesan, and cream cheese is a winning combination.

Maybe start with this recipe, then get fancy with it! Use cheeses that melt well like gruyere, American, or even Colby Jack.

Can I eat grilled cheese on a diet?

Yes! It is possible to have grilled cheese on a ketogenic diet.

Substituting the bread for keto bread or even cauliflower steaks result in an epic low carb grilled cheese!

What is the best cheese for keto grilled cheese?

You HAVE to use cheese that is good for melting. I also think using cheeses that string nicely and stick together are a must too.

Like we did in this recipe, we had a mixture of firmer cheeses and soft cream cheese. This results in a very gooey grilled cheese.

I would not recommend using only the cream cheese spread, which would result in a wet cheese sandwich. It will still taste amazing but you won?t have that epic stringy cheese you expect in a good grilled cheese.

How to store keto grilled cheese?

I suggest making these low carb grilled cheese sandwiches to order. But, if for any reason there are leftovers, store in an airtight container in the fridge for up to 3 days.

To reheat, place a skillet on low heat, add the sandwiches and cook until just warmed through.

I do not suggest freezing any leftovers.

For the keto cheddar bread

  • 6 large Eggs
  • 1/2 tsp Cream Of Tartar
  • 1/4 cup Unsalted Butter melted and cooled
  • 1 1/2 cup Almond Flour finely ground
  • 1 tbsp Baking Powder
  • 1 1/2 cup Cheddar Cheese shredded

For the keto grilled cheese

  • 3 tbsp Cream Cheese softened
  • 1 1/2 tbsp Parmesan Cheese grated
  • 2 tsp Heavy Cream
  • 3 tbsp Mayonnaise
  • 1/8 tsp Garlic Powder
  • 4 slices Keto Bread
  • 2 slices Cheddar Cheese
  • 2 slices Provolone Cheese

Instructions

For the keto cheddar bread

  • Preheat the oven to 375°F. Separate the egg yolks from the egg whites, placing them in separate large bowls.
  • Add the cream of tartar to the bowl with the egg whites. Whip with a hand mixer until they form stiff peaks, set aside.
  • In the bowl with the egg yolks, add in the butter, almond flour, and baking powder. Mix to combine. Fold in ½ of the egg whites until incorporated with a rubber spatula. Fold in the remaining egg whites. Fold in 1 cup of the shredded cheddar.
  • Pour mixture into a parchment lined loaf pan. Top with the remaining shredded cheddar. Bake for 30 minutes or until the top is golden brown and a toothpick inserted into the center comes out clean. Let cool for 10 minutes in the loaf pan, transfer to a wire rack and cool at least 30 minutes before slicing.

For the keto grilled cheese

  • In a small bowl, add the cream cheese, parmesan, and heavy cream. Using a fork, mix to combine until smooth. Set aside.
  • In a small bowl, mix together the mayonnaise and garlic powder, set aside.
  • On a clean work surface, lay out the sliced bread. Add 1 slice of cheddar to one side of the sandwich bread, add one slice of provolone to the other side. Spread the cream cheese mixture evenly on two halves. Top with the other sides of the sandwich.
  • Spread ¼ of the mayonnaise mixture on top of each sandwich. In a preheated skillet over medium-low heat, place the sandwiches mayonnaise side down into the skillet. Spread the remaining mayonnaise mixture on top of each sandwich. Place a lid, not touching on top. Cook for 3-5 minutes until the bottom is golden brown and the cheeses start to melt. Flip and cover, continue to cook for about 3-5 minutes until the bottoms are browned and the cheese is melted. Let cool slightly before serving.
