  • 3 Large Eggs
  • 1/2 cup Olive Oil
  • 2 3/4 cups Almond Powder
  • 1/2 tbsp Baking Powder
  • 2 tsp Dried Oregano
  • 1 pinch Nutmeg
  • 1/4 tsp salt
  • 1 Zucchini unpeeled and grated


  • Preheat the oven to 350 ? F. Oil a bread pan.
  • In a bowl, beat the eggs with the oil.
  • In another bowl, mix together the almond flour, baking powder, oregano, nutmeg, and salt. Pour everything in the egg mixture, mixing gently. Add the grated Zucchini, mix again.
  • Pour the dough into the mold and bake in the center of the oven for 60 minutes until the bread is golden brown.
  • Let the bread cool completely before slicing it.
