For this recipe you’ll need: cauliflower, almonds, heavy cream, unsalted butter, and salt. Gravy: heavy cream, cream cheese, butter, ground beef, salt and pepper.

I have spent more than half my life in the south. One of the things that I have learned to love is grits. I like them with a puddle of golden, melted butter in the middle, pooled in syrup or with gravy. It just doesn’t matter. I like ’em. I am not really much of a breakfast eater unless you’re talking about eating breakfast out but grits… well… they’re grits, y’all.

Low carbing isn’t too bad when you are talking about lunch or dinner but most people get bogged down with breakfast. After all, most people in the United States eat things like toast, pancakes, cereal, bagels, oatmeal, and grits for breakfast. It’s the meal that is most likely to be made up of a high percentage of carbs. Once we switch to a low carb diet what do we eat?

Eggs.

Eggs in omelets, scrambled eggs, fried eggs, boiled eggs, poached eggs…it doesn’t take very long to get tired of that menu. I don’t know about you but when things get boring I am likely to reach for something I shouldn’t be eating. A low-carb breakfast tends to be boring.

What if you could have low carb grits and gravy for breakfast? Would that make a difference? Well, heck yeah! It made a difference for me, anyway.

Obviously these are not grits because if they were the carbs would be too high to be on this blog and I wouldn’t be admitting to eating them. Here is one more time you are going to have to trust me even though you think I have lost my mind.

It’s a mixture of cauliflower and almonds.

Put down the phone and stop looking at me like that. You aren’t the first person to question my sanity and you probably won’t be the last. Just hear me out and try it once, please?

Here’s the deal, remember that cauliflower has almost no taste and it has a creamy texture when it’s cooked. Grits also have almost no taste and a creamy texture when cooked. The thing is that grits also have a slightly grainy texture to them, too. At least they do if they haven’t been overcooked to complete goo. That’s where the almonds come in. It doesn’t take many but when they are ground they add just enough texture to make everything believable.

Once you add the rich gravy with ground beef in it the whole thing becomes one, big, filling bowl of comfort for around three carbs per serving. Low carb grits and sawmill gravy.

Low Carb Breakfast Grits with Sawmill Gravy

Cauliflower and almonds make a fairly good, low carb substitute for grits in this recipe. Learn to enjoy breakfast again!

Ingredients

Grits

  • 1/3 cup raw cauliflower
  • 1 tablespoon almonds
  • 1 tablespoon cream
  • 1 tablespoon unsalted butter for the pan
  • salt Pinch of

Gravy

  • 1/4 cup heavy cream
  • 1 tablespoon cream cheese
  • 1 tablespoon butter
  • 1/4 cup cooked ground beef about 3 ounces
  • Salt and Pepper to taste

Instructions

Grits

  • Pulse the cauliflower and almonds in the food processor until the mixture looks like crumbs.
  • Add 1 tablespoon of butter to a small saute pan and melt it over medium heat.
  • Add the cauliflower mixture and saute for about 3 minutes until tender but not mushy.
  • Add 1 tablespoon of heavy cream and simmer for another minute or so.
  • Remove from heat, add salt to taste. Use a little more than you think you’ll need.

Gravy

  • Add the cream, butter, and cream cheese to the saute pan.
  • Stir over medium heat until the butter and cream cheese are melted and the mixture is smooth and well combined.
  • Add the meat.
  • Taste and add salt and pepper as needed.
  • Spoon the gravy over the cauliflower mixture.

Notes

The gravy freezes well but the cauliflower mixture does not.

    I buy calilflower when I find it on sale…bring it home and rice it and seal in with my foodsaver and place in the freezer so all I have to do is reach in my freezer and keep right on with my cooking! Thank u for this recipe I will be trying.for sure!

    1. So are you able to taste the almonds in this recipe? Might be an odd question(i love almonds) but hubby generally wont touch almonds as he doesnt like the flavor.

    2. Stacy – I don’t taste them. There’s so many other good flavors in here that they get lost. They are more for texture than anything.
