Who doesn’t love a low carb burger?
Whether you are doing Atkins induction or just want super low carb with lots of flavor, this low carb burger with artichoke and spinach dip is perfection. 95% lean ground beef is simply seasoned with salt and pepper then pan fried in butter to keep it tender and juicy. It’s topped with a thick spinach, artichoke, and Parmesan dip and shredded radishes. Wrap it in a lettuce leaf or eat it with a fork – it’s SO good either way. Less than 1 net carb and so satisfying.

Chicken is a staple for some people on a low carb diet but for me it’s hamburgers. I don’t mind chicken once in awhile but a hamburger?
I could eat it every day. Every. Single. Day.
Actually, one of my mom’s weekly recipes was a hamburger patty. No bun, no grill, just a plain pan-fried hamburger patty. A gourmet cook she was not.
I didn’t fall off the wagon during the holidays. Nope, not at all — what I did was climb out and push that sucker right over a cliff. I didn’t go to the gym and I wasn’t careful what I ate so at the end of 10 days I’d gained 6 pounds and felt awful. Yay for the holidays.
It wasn’t a surprise — I pretty much do this every year. The first two weeks of January are spent on Atkins induction. I’m nothing if not consistent.
Since I am such a hamburger freak I generally grill several hamburgers at once and freeze them. The trick to that is undercooking them a little so when you reheat them they don’t overcook. I’ll keep one thawed in the fridge and toss it in a pan with some butter when I’m ready to eat.
I’ve found that a good, grated radish gives ?that extra piquant flavor that onions do but for 0 carbs! I grate them over anything I would normally put onions on. You’re welcome!
If you’ve got a cooked burger this won’t take any time at all!

I am with you Marye on the hamburgers every day….I don’t…but I certainly could. I like mine on a lettuce leaf with a grilled onion under the burger while cooking in butter, then when I turn I add cheddar cheese and top with a runny fried egg! Yum.
YUM!!
