Being from Texas I love my Tex-Mex flavors. I love the blend of the Texan influence on the flavors of Mexican food. I am a pushover for enchiladas but how in the world do you make them with low carb ingredients? Especially with just eggs, butter, and cheese?

Wait, eggs, butter, and cheese is an omlet right? An omelet wasn’t going to cut it. Even if I threw some taco seasoning on it, it’s still an omelet and not the enchilada I’m craving.

What I did was to mix the cheddar cheese into the eggs. When I cooked the mixture in an omelet pan it made it have a bit more texture than an omelet. I let it get pretty golden on the bottom. With the cumin, smoked paprika, and gooey Pepper Jack cheese inside it really did satisfy my omigosh-I-need-Tex-Mex cravings. Sometimes if you can get the texture close enough and the flavor on target you can trick your mind into going along for the ride. I hope you’ll find that this is the case with this recipe.

Low Carb Cheese Enchiladas Variations

The wonderful thing about Tex-Mex food is that the variations are almost endless.

Low Carb Chicken Enchiladas

Add some shredded chicken breast and voila, you have low carb chicken enchiladas. To turn these into a chicken enchilada, I like to use leftover chicken breast from a rotisserie chicken. I found that when I added some shredded chicken chicken breast, I had to add a little more salt (or taco seasoning) to keep the flavors up. When I used some shredded chicken thigh meat together with some shredded chicken breast meat, the flavor from the chicken thigh was plenty so I didn’t need to add salt or other seasonings. Taste the chicken mixture and you’ll see what I mean.

Low Carb Beef Enchiladas

Adding some ground beef to this recipe will definitely kick it up a notch. You’ll definitely want to double the salt and pepper in the recipe when you do this. Add some cream cheese to this and omg it’s just amazing.

Low Carb Tortillas

There are various types of low carb tortillas. A regular tortilla is made with either wheat or corn. As such, they are not the best for a low carb lifestyle. When you look at the refrigerator section of your grocery store, you’ll find low carb tortillas. Many are made from cheese so they fit perfectly with a low carb enchilada. I tried some low carb tortillas made from parmesan cheese. So yummy !

Taco Seasoning

To kick up the flavor, I thought about adding some enchilada sauce. But the carb count can get up there pretty quick as a even a small amount of enchilada sauce can have 3-5 grams of carbs. Instead, I’ve tried to sprinkle taco seasoning into the mix to kick up the flavor. If you don’t have taco seasoning handy, you can try to add some chili powder, garlic powder, and some cayenne pepper powder to this recipe for some heat.

Cream Cheese

Adding some cream cheese will add a richness to your enchiladas. Especially if you have added a protein like chicken or beef.

Instructions

  • Blend the eggs and cheddar cheese in a blender until smooth.
  • Set aside.
  • Melt the butter in an omelet pan.
  • Pour in the egg mixture.
  • Cook until golden on the bottom and just set on the top, lifting the egg up with a spatula and letting the uncooked egg flow underneath.
  • Top with the Pepper Jack, a little salt, pepper, and cumin. (to taste)
  • Fold in thirds and scoop out onto a plate.
  • Sprinkle with smoked paprika, a little more cumin, and a few shreds of cheddar.
