Once you are beyond the induction stage of Atkins or other low-carb eating plan you are free to have a cocktail once in awhile. Keep your carbs in check with this Low Carb Daiquiri.
For this recipe you’ll need: white rum, lime juice, sugar free syrup (water xylitol), and ice.

I enjoy ending the day with a cocktail or a glass of wine. I tend to prefer cocktails because there are less carbs to worry about and, if the day has been particularly chaotic, one ?cocktail can do what it takes two or three glasses of wine to do, if you know what I mean.
I am not the world’s most naturally relaxed person and the past few years have been crazy. Relaxing with a cocktail once in awhile kind of makes me feel grown up and in control. Silly, right?

The daiquiri is the cocktail of angsty writers and artists. Hemingway liked this cocktail so much he had his own version created with grapefruit juice. It’s good stuff. The secret is in the simple syrup that you make with xylitol. Alcohol doesn’t have carbs, it’s just the stuff we put in it. Obviously you have to be careful. Alcohol will stall you, and heavy drinking is not healthy. But for those of us who enjoy the cocktail hour without the carbs drinks like this low-carb daiquiri are perfect.

Low Carb Daiquiri
Ingredients
- 2 cups cracked Ice
- 2 ounces rum white
- 1 ounce lime juice
- 1/2 ounce syrup sugar free simple
Simple Syrup
- 1/4 cup water boiling
- 1/4 cup xylitol
Instructions
- Add cracked ice to your glass to chill it.
- Add the rum, cracked ice, lime juice, and simple syrup to a shaker.
- Shake well for a minute or so.
- Pour the cracked ice out of the glass.
- Strain in the daiquiri.
- Serve with a lime wedge.
