I know, I know… I am the microwave queen when it comes to low carb but no one else in my family eats this way and I just don’t have time to spend a couple of hours making something for just me. So, the majority of recipes you are going to find here are those that can be made quickly and easily… and for one person.

Bread. I love bread so much. I’ve been making homemade bread since I was 14 and I am about to be 55 so you do the math. It is relaxing and my family loves it. I get to sit there and smile while they eat it and I get to smell it because… carbs. If a carb was a cartoon character it would look like Snidley Whiplash from the 1960s cartoons.

But I digress.

A lot of times when I cave to carbs it is for a simple sandwich. I could live on them. Yes, I am a food writer. Yes, I have written cookbooks and been invited to amazing restaurants. Yes, I can taste that creamy white asparagus soup once and totally copy it right down to the truffle shavings, but a sandwich?

Cajun turkey with lettuce, pickles, grainy mustard, and mayo is my favorite but I am not fussy at all. Fresh, sunripe tomatoes on toast with mayo, BLTs, peanut butter and jelly, Pickles and mayo… the list goes on. I literally used to eat Spagettio sandwiches when I was a little kid.

I love sandwiches.

This low-carb sandwich bread works. Make it in the widest mug you have and then let it cool a little before you slice it. I was able to slice it into 4 rounds which made 2 sandwiches — very filling sandwiches. The bread soaked up just enough of the mustard, mayo, and pickle juice to make it perfect.

Ingredients

  • 1/4 cup egg whites
  • 1 tablespoon Coconut Flour
  • 1 tablespoon flax meal
  • 1 tablespoon Almond Flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 2 tablespoons melted butter to cut fat try 1 1/2 teaspoons of olive oil instead of the 2 tablespoons of butter and see how you like it. reduces calories to 318

Instructions

  • Whisk the egg whites until foamy.
  • Add the remaining ingredients and mix until smooth.
  • Spoon into a greased coffee mug.
  • Microwave for 2 minutes or so, until a toothpick inserted in the middle comes out clean.
  • Let cool for a few minutes.
  • Slice into 4 slices use as desired.

  1. You are amazing! So glad I found you via Pinterest – I have struggled to find anything bread like that I really like the texture of but have just made this and WOW!!!! And yes I have a thyroid problem and diabetes Type 2 so Low Carb is the only way for me too and I love that you do it in one person portions and in a microwave as I too have to cook normally for my kids and hate waste. Brilliant person!!!

  2. How I wish I could buy deflavoured coconut flour! Is it available? I find almond flour very expensive.
    The coconut oil I used is devlavoured and tastes wonderful.

  3. So, I have yet to try a recipe I like with almond or coconut flour! This looks and sounds delicious. i’m just wondering if everyone else typically likes almond/coconut flour? Or am I just weird! I keep being excited about different recipes…try them and then really dislike them 🙁 Just wondering. Hoping to just find a bread recipe I happen to like!

    1. I am finding it is an acquired taste; the baked goods certainly don’t have the fluffiness and volume of wheat flour but I am willing to do almost anything to try to g this weight off.
