Do You Miss Popcorn? Try This Low Carb Copycat

I love popcorn, always have, probably always will. My body does not love popcorn or rather maybe it loves to too much. The carbs in that stuff not only put a screeching halt to any weight loss that is happening, it creates a craving in me that just will not be denied. I don’t care if it is plain, spicy, cheesy, or caramel popcorn… I want that stuff in my belly!

For this recipe you’ll need: cauliflower, butter, taco seasoning, and salt.

The low carb snack of choice is pork rinds. They are OK but they don’t thrill me a whole lot, especially when I am not supposed to be eating anything else, you know?

Well, this has the crunch, the buttery yumminess, and the saltiness of popcorn. Is it an exact match? No, it isn’t.

Yes, it’s cauliflower again. Listen, cauliflower is pretty much a staple food when you are low carbing so you might as well plan on seeing it here a lot. I am doing a lot of recipe development and cauliflower figures in it pretty intensely. Part of the reason is that is cheap and the other reason is that it doesn’t have a lot of weird stuff in it. Need another reason?

It works.

This is almost too pathetic to be posted as a recipe. It is super easy. Now, here’s the deal. You are just going to warm the cauliflower pieces up enough to make them warm. You do not want to cook the cauliflower at all so that it is hot but retains the crisp, crunchy texture.

I used taco seasoning on mine because I like it that way. You can use just salt if you like but don’t think it will be as good. Seriously, I know you think I am nuts but if you don’t think this stuff is as addictive as popcorn I am going to be surprised.

Ingredients

  • 1/2 cup cauliflower
  • 2 tablespoons butter
  • 2 teaspoons taco seasoning
  • Salt to taste

Instructions

  • Melt the butter
  • Break the cauliflower into small florets and spread in a single layer on a plate
  • Microwave just until hot but not cooked
  • Pour the melted butter over the cauliflower
  • Add the taco seasoning
  • Mix gently and eat. Grab a paper towel – you’ll need it.

  5. Unfortunately the carbs in the two teaspoons of taco seasoning are very likely equal to the carbs in ?/? cup of popped corn. Sorry about that. Try chili powder instead.
