We’ve taken a couple of cruises over the years and, while the cruise lines do a lot of amazing things to keep their guests happy, one of the best things about cruises is the tropical cocktail combinations that they come up with. Coconut, pineapple, rum, passionfruit… the flavor combinations go on forever making it super hard to choose what to sip!
But oh! the carbs.
Living in North Texas I don’t have a view of the beach or even a lake unless the creek floods, but I do like sipping these summery cocktails while relaxing in the hot tub! I think that will be the extent of my vacation this summer!
We’ve got a crazy summer — it makes me tired just thinking about it. The three youngest got out of school a week ago. They are away at youth camp right now, coming back Sunday. Next week they are headed 2000 miles away to their father’s for a week, then two of them are going on missions trips with their youth group in July — one to San Antonio to help build a church (I think), and one to Kenya for 10 days to do all kinds of things. By the time things settle down it will be nearing the end of July which will give us about 3 weeks before school starts back up.
Makes me tired just thinking about it.

I don’t think I’ve ever been away from my kids this much in such a short period of time and I am kind of unsettled about it all. The opportunities and experiences they have will be amazing and I would never hold them back from that, though. It’s been so cool watching them grow up and experience things I’ve never imagined. Out of 8 kids 3 of them are in the military. They have been all over the world — places the I have only dreamed about like Japan, Italy, Kuwait…and so many more. Now Kenya!
Anyway, I’ll be right here this summer in my hot tub with my pineapple cake cocktail and that sounds good to me!

Pineapple Cake Cocktail
Ingredients
- 1 ounce cake vodka
- 1 ounce plain vodka
- 1 ounce Genteman Jack Whiskey
- 1/2 ounce of lime juice
- 10 drops vanilla stevia liquid
- 2 quick squeezes coconut pineapple water enhancer
- 1 quick squeeze white cherry water enhancer
- 6 ounces diet lemon lime soda
- Ice
Instructions
- Fill a glass with ice.
- Add everything except the diet soda to a shaker filled with ice.
- Shake to blend.
- Strain into the ice filled cup.
- Add the lemon lime soda.
- Garnish as desired.
