Ingredients
Waffles
2eggsseparated
1pinchcream of tartar
10dropsliquid stevia, vanilla flavor
1/4teaspoonalmond extract
3tablespoonsbuttermelted and cooled
2tablespoonsalmond flour
1/2teaspoonbaking powder
Nonstick pan spray
Bavarian Cream Filling
1tablespoonsugar free vanilla instant pudding mix
1/3cuphalf and half cream
1.5ouncescream cheese
Instructions
Mix the almond flour and baking powder together.
Set aside.
Beat the egg whites and cream of tartar until stiff.
Set aside.
Beat the yolks, liquid stevia, almond extract, and melted butter until smooth.
Stir the almond flour mixture into the egg yolk mixture.
Fold in the egg whites until well blended.
Spray heated waffle iron with non-stick spray.
Spoon about half the batter on the waffle iron.
Cook until it stops steaming.
Remove waffle and repeat with the remaining batter.
Bavarian Cream
Mix the filling ingredients together until smooth.
Set aside until ready to assemble waffles.
Assemble
Spread 1/2 the filling on one waffle and roll carefully.
