Hamburger and Cauliflower Stroganoff

Ingredients

pound
lean ground beef
1/2
cup
chopped onion
1/2
cup
mushrooms
sliced optional
1/2
cup
white wine
1/4
cup
heavy cream
1
cup
sour cream
2
ounces
Monterey Jack cheese
shredded
1 1/2
pounds
sliced cauliflower
Fresh Parsley
Salt
Pepper

teaspoon
garlic powder
Instructions
Bring 2 cups of water, 1 teaspoon salt, and the garlic powder to a boil in a saucepan.
Add the cauliflower, turn the heat down, and cover.
Simmer until tender.
Drain and set aside.
Cook the ground beef and onion in a frying pan until the ground beef is cooked.
Add mushrooms and stir until tender, about 3 minutes.
Drain off fat. Blot with absorbent paper towels to remove as much grease as possible.
Add the cauliflower, wine, and heavy cream.
Simmer for 3 minutes.
Stir in the sour cream and cheese.
Heat through.
Taste and adjust seasoning.
Sprinkle with parsley and serve.
