Ingredients

cauliflower

heavy cream

butter

bacon

jalapenos

onions
chopped
Salt and pepper to taste

cream cheese
softened

cup
sharp cheddar cheese
shredded, divided use
Instructions
Clean the cauliflower and break into florets.
Steam until very tender.
Meanwhile, cook the bacon until crisp. Crumble and set aside.
Pour off all but 2 tablespoons of bacon grease.
Saute the onion and jalapenos until tender.
Add the cauliflower, cream cheese, cream, and butter to a food processor and process until smooth.
Mix the cauliflower mixture, the onion mixture, and the bacon.
Fold in 1 cup of the cheese.
Taste and adjust seasoning (salt and pepper)
Spoon into a greased 8 x 8 inch casserole dish.
Top with remaining cheese.
Bake at 375F for 20 minutes.
