Ingredients
1tablespoonbutter
1tablespoononionfinely chopped
1/4cupground beefseasoned,cooked
1/4cupheavy cream
1/2cupwater
1/8teaspoongarlic powder or to taste
2tablespoonshabanero cheddar cheese grated. Or pepper jack cheese
2tablespoonscheddar cheesesmoked or extra sharp cheddar, reserve one teaspoon
Salt and pepper to taste
Instructions
Saute the onion in the butter until soft and the onion just starts to turn golden
Add the heavy cream and the water and bring to a simmer
Simmer for 2 minutes to reduce slightly
Stir in all but the one teaspoon reserved cheese.
Stir until melted and smoothly mixed with the cream mixture
Add the cooked ground beef
Simmer for another 2 or 3 minutes so the flavors can blend
Spoon into a bowl and sprinkle reserved cheese on top
Notes
If you can't find habanero cheddar you can use pepperjack instead. It's important that you use strongly flavored cheese in this since there isn't that much of it. Tillamook was used in this recipe
