1/3cupsharp Cheddar cheese, grated
1tablespoonbutter
1 1/2teaspoonslight cream, 1/2 and 1/2
1/4cupalmond flour
1/2cuphemp seed, you may be able to substitute ground pork rinds but I have not tried it
1/4teaspoonTony Chachere's Creole Seasoning, or cayenne + salt to taste -
Instructions
In a food processor cream the cheese and butter together with quick pulses.
Add milk and pulse a couple of times.
Mix the remaining ingredients.
Add to the cheese mixture and pulse until it all comes together.
Chill for 30 minutes.
Preheat the oven to 400F.
Roll the cheese mixture into an 1/8 inch thick rectangle on a Silpat sheet.
Use a pizza cutter to cut the mixture into 12 "straws" but don't separate.
Bake for 10 minutes.
Remove from oven and run the pizza cutter gently between the "straws" but don't separate.
Let cool and then gently separate. These cheese straws are very delicate and will break easily if you are not careful.
Store in an airtight container at room temperature.
Notes
try Pepper Jack or smoked Gouda - any hard cheese will work.
