Ground beef, onion, bacon, and pickles are mixed together, topped with cheese, and then a mayonnaise cream sauce is poured over the top. The ultimate keto cheeseburger casserole. Yum. It’s baked and is kind of like a quiche, but not really.

For this recipe you’ll need: ground beef, garlic, salt, pepper, onions, bacon, dill pickles, eggs, mayonnaise, half and half, and cheddar cheese.

I have always had a thing for cheeseburgers. They are my favorite. Being on a low carb diet, I miss the bun I have to admit. My neighbor likes to add a little cream cheese and it does add some creaminess.

I don’t know how they did it but most of the cheeseburgers of today just can’t compare.

The carbs and sugars in most cheeseburgers are found in the bun and the condiments. It’s easy to see that a hamburger bun has carbs because it is bread. The sneaky carbs to watch for are in things like ketchup. Regular ketchup usually has sugar as one of their ingredients. But there is nothing that brings a burger to life than ketchup. I prefer to make my own shredded cheese from a block of cheese. The reason is that while, the shredded cheese you find at the supermarket is way easier to use, it has an additive to keep it from clumping into a blob in the bag. It’s usually cellulose. Which is just a fancy word for wood fiber I think. It’s that and it just doesn’t taste the as rich as freshly grated cheese. Granted, it takes a lot more work to grate cheese than to pull out a handful from a bag. My cheese grater of choice is my box grater. It’s super sturdy which is important so I don’t slice my fingers. It’s made by Cuisinart and has a rubber bottom so it doesn’t slide around. The handle is comfortable and makes it easier to control. Best of all, it’s stainless steel so it is easy to clean and doesn’t rust easily.

Creamy, cheesy, bacon cheeseburger casserole is easy to make and so good. You can assemble it ahead of time and bake it up two days later.

Ingredients

  • 1 pound lean ground beef
  • Salt and pepper
  • 1/4 cup Onion chopped
  • 6 slices Bacon
  • 1 clove minced garlic
  • 1/4 cup chopped dill pickle
  • 3 eggs
  • 1/2 cup mayonnaise
  • 1/2 cup half and half
  • 8 oz shredded cheddar cheese

Instructions

  • In skillet, brown ground beef with onion, garlic, salt and pepper.
  • Meanwhile cook the bacon until crisp.
  • Break the bacon up into bite sized pieces.
  • Drain the fat from the ground beef and the bacon.
  • Blot with paper towel to remove as much fat as possible.
  • Mix the bacon and pickles into the ground beef.
  • Spoon the mixture into a greased 2 1/2 quart casserole dish.
  • Preheat oven to 350F.
  • Combine eggs, mayo and half and half being sure to mix well.
  • Sprinkle cheese over beef mixture in pie pan and pour egg mixture over the whole thing.
  • Bake 30-35 minutes, until top is browned and set.
  • Cool 10 minutes before serving

  1. I love this recipe. I’ve made it twice. Can stomach mc Donald’s but I’m addicted to in & out.
    It says 2gms carbs in the nutrition box..not right? Also the time to make is off. 5 minutes for prep? It takes at least 10 minutes to chop onions and pickles and cook the meat. It also says 25 minutes to cook but in the directions it says 30-35 minutes.
    I don’t pay much attention to prep time but some people do.
    I substituted dill pickle relish for the chopped pickles once and it worked great.

  2. I made this tonight… it was great!

    I made a few changes. Instead of chopping onions, I threw in some dried onions while the burger cooked. The fat hydrated the onions, and I used bacon pieces instead of frying some up. I threw in some red pepper as well as black. I used dill relish instead of chopping a pickle, and used cream instead of half and half. Baked in an 8×8 pan… Perfect!

    I will definitely make it again, maybe use chili powder and some diced tomatoes next time.

  3. I read how you mentioned MCDONALD’S fries dont taste the same as they did in 60s, because they had to start frying them in another grease,which was healthier, but I agree.taste bad
