This easy Pina Colada cocktail recipe is low carb with less than one carb per serving! We’re not talking about thimble sized servings either! All of that frozen, creamy, coconutty-rum flavor and just 0.8 carbs. I’m in!
For this recipe you will need: rum, heavy cream, DaSani coconut pineapple flavor enhancer, ice, and a blender.

Thanks to some alcohol resistant genes I can (and have) pretty much drink anyone under the table with straight whiskey shots but I don’t like to make a habit of it. Honestly, I’ve tried to leave that behind along with halter tops, and Daisy Duke shorts. I do, however, like an expertly mixed cocktail and the sweeter the better. Since I’ve switched to a low-carb lifestyle (thanks for nothing, thyroid gland) I try to stick with vodka tonics and simple cocktails because it’s easy to keep the carbs down. About a year ago I discovered water enhancers and I have to tell you that it has changed the way I look at cocktails!
I walk down the aisle where the water enhancers are and carefully read each one to see what flavors are available. They have totally replaced fruit juice in my cocktails.
When I saw the coconut pineapple flavor enhancer I knew that I was going to create a Pina Colada with it or die trying. I am happy to say that my death is not imminent! This cocktail is nearly identical in flavor and texture to my favorite Pina Colada and, just like the original, you have to be careful because it packs a punch. It’s so smooth and sweet that you don’t realize how much alcohol is in it… until you stand up. The night I finally got this right I sipped two of them in the hot tub and boy did I sleep soundly!
The first time I ever had a Pina Colada was on my 18th birthday in 1978. Back then 18 was the legal age to drink and I was trying to figure out how I was going to celebrate. Actually, I knew how — I just needed to know where! ?I spent the day at Six Flags with some friends and that night headed across the street to a steak house — I can’t remember the name. It’s defunct now. Anyway, I nervously asked for the cocktail menu, pulled out my ID, and ordered the first thing that sounded sophisticated.
A Pina Colada.
For the next couple of years if I was drinking alcohol it was a frozen Pina Colada cocktail. I fell in love with the creaminess and the flavor that day. When I was living in Monterey, California a few years later I spent a lot of time on Cannery Row at the Outrigger. They had they amazing Pina Coladas that were served in a ceramic pineapple, which you got to keep. They were GINORMOUS! I had that pineapple for the longest time — I don’t know what happened to it.
Anyway, if you like Pina Coladas (and getting caught in the rain… now you’re hearing that song in your head, aren’t you?) you are going to love this low carb Pina Colada cocktail! Always drink responsibly — don’t drink and drive. There’s too much at stake!
I use pineapple coconut water enhancer so try Amazon if you can’t find it locally. You’ll also want a good blender because believe me you’ll be using it often!!

Pina Colada Cocktail that’s Low Carb!
Ingredients
- 3 ounces of rum
- 1 ounce cream
- 4 ounces of water
- 4 good sized ice cubes maybe 1/4 cup?
- 1/3 teaspoon pineapple coconut water enhancer I used DaSani, or a little more to taste
Instructions
- Place all ingredients in the blender.
- Blend on high until smooth and creamy.

What’s a water flvour enhancer? Is that like a cordial? I’m from Australia, and have been low carb for a year (and love it!) and I LOVE pi?a coladas (and walking in the rain!
